My Roasted Tomatoes Recipe is an easy and delicious side dish using simple, fresh ingredients! Juicy tomatoes are covered in olive oil and slightly blister from the heat of a cast-iron skillet. These roasted grape tomatoes are great for a snack, putting on salads, used in sauces, and so much more. In just under 15 minutes, you can have this easy side dish on your table for everyone to enjoy!

Roasted Vine Tomatoes

My family and I love it when juicy grape tomatoes are in season, and roasting them is such a wonderful way to enjoy them. Simply toss the tomatoes in olive oil, season them, and roast them to perfection! The roasted tomatoes turn out sweet, slightly charred, and oh-so-delicious!

Once you get in the habit of roasting fresh vegetables, you will find so many ways to use them. Tomatoes of any variety are a wonderfully wholesome side dish packed with flavor. The juicier the tomatoes are, the better!

Roasted tomatoes make a great addition to sauces, as a base for soup, served on top of a mixed green salad, or tossed with a big bowl of fresh pasta drizzled with olive oil and parmesan.

When fresh vegetables are in season, roasting is one of the best ways to use them (kudos if you get them right from your garden). I like to can or freeze the roasted veggies so I can have them all year long!

Roasted Tomatoes Ingredients

  • Grape Tomatoes
  • Coarse Ground Pepper
  • Coarse Salt
  • Granulated Garlic
  • Olive Oil

How to Roast Tomatoes in a Skillet

  1. Drizzle oil over tomatoes and lightly rub it in.

  2. Sprinkle the tomatoes with salt, pepper, and granulated garlic, one at a time. You don’t need to measure these, just season until all the tomatoes are coated.

  3. Oil a skillet. Heat to medium-low, then add the tomatoes.

  4. Cook, covered, for about 10 minutes. Do not flip or move the tomatoes while they’re roasting.

  5. Remove from heat and enjoy!

Roasting Tomatoes Recipe Tips

  • Some of the tomatoes will burst while roasting; this is ok and to be expected. As long as you don’t mess with them, very few should burst, leaving the tomatoes looking gorgeous.
  • You can eat these tomatoes by themselves, as a snack, add on top of a salad, add to pasta dishes, use in pasta sauce, and so much more. They have an amazing flavor.
  • I used sugar bombs, but you can use any grape tomatoes you choose. You can even use cherry tomatoes and other variations of small tomatoes. If desired, you can add raw garlic cloves to the pan to cook with the tomatoes. This will further enhance the flavor of the tomatoes.
  • If desired, you can remove the tomatoes from the vine before roasting. Just do not stir them while roasting.

How long does it take to roast tomatoes?

My recipe for roasted grape tomatoes takes about 3 minutes to prep and 10 minutes to roast the tomatoes. This will give you a quick and easy side dish on the table in under 15 minutes!

What are sugar bomb tomatoes?

Sugar bombs are a variety of grape tomatoes most noted for their very sweet qualities. They are slightly bigger than traditional grape tomatoes and grow on vines in large clusters.

How long do roasted grape tomatoes last?

Roasted grape tomatoes are best when stored in an air-tight, sealed container and left in the refrigerator for up to 1 week.

Are roasted tomatoes gluten-free?

Roasted cherry tomatoes are a perfect gluten-free side dish to enjoy! As always, be sure to check each ingredient for specific food handling and allergy information.

Can I roast cherry tomatoes?

You can also follow this recipe for roasting cherry tomatoes. Simply swap the grape tomatoes for cherry, and enjoy.

Oven Roasted Tomatoes

You can also roast this tomato recipe in the oven. To roast tomatoes in the oven, follow these steps:

  1. Preheat oven to 400℉.
  2. Add tomatoes drizzled with olive oil, salt, pepper, and granulated garlic to a cast iron skillet or sheet pan.
  3. Roast the tomato mixture in the oven for 15-20 minutes, or until the tomatoes are nicely blistered.

Can I freeze roasted tomatoes?

Roasted grape tomatoes can be stored in the freezer for up to 8 months. This is a perfect way to enjoy your roasted tomatoes recipe all year long! Freezing is an especially great way to make soups, sauces, and pasta dishes even when grape tomatoes are not in season. Here's how I do it:

  1. After the roasted grape tomatoes have cooled, place them in an air-tight sealed container or freezer bag.
  2. Label and date the outside of the container.
  3. Place the frozen tomatoes in the freezer until ready to use them.
  4. To thaw the tomatoes, simply leave in the freezer overnight!
  5. If you need to reheat the tomatoes, place the thawed tomatoes back in a cast-iron skillet, drizzle with a little olive oil (about 2 teaspoons) and place in a 200℉ oven for 10-15 minutes or until tomatoes are heated through.

Roasted Tomato Sauce

Roasted tomatoes make the perfect base for an easy tomato sauce. With just a few extra steps and ingredients, you can have a homemade tomato sauce in no time at all! This is a perfect sauce for fresh pasta, casseroles, pizzas, and soups!

Roasted Tomato Sauce Ingredients

  • olive oil
  • grape tomatoes
  • onion, chopped in quarters
  • smashed garlic
  • salt and pepper
  • fresh basil leaves, torn

How to Make Roasted Tomato Sauce

  1. Preheat the oven to 400℉
  2. In a large bowl, place grape tomatoes, onion, and garlic and toss with olive oil.
  3. Transfer to a large cast-iron skillet or sheet pan.
  4. Roast the tomato mixture in the oven for 15-20 minutes, or until veggies are golden brown (you want them to blister for this recipe). Alternatively, you can also roast them in a cast iron pan on the stovetop.
  5. Once the veggies have cooled slightly, add them to a blender with the torn basil leaves and pulse until the sauce has become smooth and velvety. (You could also use a food processor or emulsion blender).

Roasted Tomato Soup

To make a delicious roasted tomato soup, start by making roasted tomato sauce, then follow these steps to turn it into a homemade tomato soup:

  1. Transfer tomato sauce into a large sauce pan and place on the stove over medium heat.
  2. Add 2 cups chicken broth (you could also use vegetable broth for a vegetarian version).
  3. Add 1 cup heavy cream.
  4. Bring the soup to a boil, then lower the heat and simmer for 20 minutes, stirring occasionally.
  5. Serve soup in a large bowl with fresh croutons and basil. Or, if you're like me, with a grilled cheese sandwich!

Do I need to use grape tomatoes?

I like to use grape tomatoes for this recipe because they are perfectly sweet and they only blister slightly when they are roasted. You can use this same recipe with a variety of tomatoes, depending on what you like!

Just as a note, if you use larger tomatoes it is easier to halve, quarter, or slice them (rather than keeping them whole). Here are some other varieties to try:

  • Roma tomatoes
  • Any variety of cherry or grape tomatoes
  • Heirloom tomatoes
  • Campari tomatoes
  • Plum tomatoes

What to Serve with Roasted Tomatoes

Try serving my roasted tomatoes recipe on a big white platter next to the main course! The bright red colors look so elegant, with the slightly charred and blistered tomatoes- it's enough to make your mouth water.

  • 1 Cast iron skillet

Ingredients
  

  • 3 Vines of Grape Tomatoes or About 2 Pounds
  • Coarse Ground Pepper to taste
  • Coarse Salt to taste
  • Granulated Garlic to taste
  • Olive Oil enough to drizzle over all the tomatoes, about 3-4 Tbsp.

  • Drizzle a dab of oil over the tomatoes and lightly rub the oil over the tomatoes.
