Carefully slice your red onion. Then, add them to a jar or container with a lid.
1 large red onion
In the same jar, add in water, apple cider vinegar, sugar, and salt.
½ cup sugar, 2 cups apple cider vinegar, ½ Tablespoon salt, 2 cups water
Secure the lid onto your container and shake well to mix.
Store the container in the fridge until your pickled onions are bright pink and tender. This may take 30 minutes to overnight, depending on the thickness of your onion slices.
Notes
Add a few cloves of garlic to your jar for a more garlicky pickled onion!
To make your pickled onions spicy, add a few freshly sliced jalapeños to your container.
If you want to naturally sweeten your pickled onions, I recommend using maple syrup or honey.
Whenever I slice my onion, I typically will slice them a little thicker for a crunch, but slicing your onions thinly will result in a quicker pickling process.
