My Skillet Roasted Tomatoes Recipe is an easy and delicious side dish using simple, fresh ingredients! Juicy tomatoes are covered in olive oil and slightly blister from the heat of a cast-iron skillet.
Olive Oilenough to drizzle over all the tomatoes, about 3-4 Tbsp.
Instructions
Drizzle a dab of oil over the tomatoes and lightly rub the oil over the tomatoes.
3 Vines of Grape Tomatoes, Olive Oil
Sprinkle the tomatoes with the salt, pepper, and granulated garlic, one at a time. You don’t need to measure these, just until they coat the tomatoes pretty well.
Oil a skillet. Heat to medium-low before adding the tomatoes.
Cook, covered, for about 10 minutes. Do not flip or mess with the tomatoes while they’re roasting.
Remove from heat and enjoy!
Notes
Some of the tomatoes will burst while roasting, this is ok and to be expected. As long as you don’t mess with them, very few should burst, leaving the tomatoes looking gorgeous.
You can eat these tomatoes by themselves, as a snack, add on top of a salad, add to pasta dishes, use in pasta sauce, and so much more. They have an amazing flavor.
I used sugar bombs, but you can use any grape tomatoes you choose. You can even use cherry tomatoes and other variations of small tomatoes.
If desired, you can add raw garlic cloves to the pan to cook with the tomatoes. This will further enhance the flavor of the tomatoes.
If desired, you can remove the tomatoes from the vine before roasting. Just do not stir them while roasting.
